En apariencia es un queso de corteza natural y cepillada que recuerda a las elaboraciones tradicionales suizas. Su interior presenta tonos más ocre fruto de la reacción de Maillard que ocurre al calentar la leche a temperaturas por encima de los 40ºC.

Presenta pocos ojos y su textura es elástica.

Corteza suave, aromas a obrador, brioche. Ligeramente elástico en textura. Notas afrutadas, sobre todo piña y toques dulces.
