COUNTRY BREAD TOAST WITH FRENCH OMELETTE AND PI CHEESE
“There is only one mother.” With Mother’s Day approaching, at De Hualdo we propose gourmet alternatives that turn any moment into a special memory.
We bring to the omelette the authentic flavour of cheese from our own estate. Pi cheese, made with milk from our herd of Manchego sheep, adds vegetal and floral notes thanks to the velvety mould that develops on its rind during ageing in the cellar. It is a semi-soft cheese with a smooth texture and a powerful, expressive intensity on the palate.
Ingredients
- 2 free-range eggs
- Cornicabra extra virgin olive oil – Casas de Hualdo
- Salt
- Freshly ground black pepper
- Pi cheese
- Toasted country bread
Preparation
- Separate the yolks from the whites.
- In a bowl, whisk the whites vigorously until they are well foamy, but not stiff.
- In a separate bowl, beat the yolks and season with salt and freshly ground black pepper.
Combine both mixtures. - Heat a frying pan over medium heat with a drizzle of our Cornicabra extra virgin olive oil from Casas de Hualdo.
- Once hot, pour in the mixture, spreading it evenly, and allow the base to set.
- When the bottom is set, gently roll the omelette in on itself using a spatula, folding the outer edges inward as you go. The most purist omelette lovers insist it should have an oval shape, so… you may have to break quite a few eggs to master it!
- Plate the omelette and grate Pi cheese over the top. You’ll be amazed by the flavour.
