Our Extra Virgin Olive Oils are made in less than 6 hours after harvesting the olive at its optimal point of ripeness. Cold extraction prevents the loss of the most volatile components and aromas. The oil is stored in inert stainless steel tanks, at a stable temperature throughout the year to maximize its properties, and is bottled only on demand.
