Blending of our certificated varieties of organic Arbequina and Cornicabra, it’s the perfect balance between the robust character of the variety Cornicabra and the subtle fruity of the Arbequina. Elaborated in extreme olive growing conditions, in our olive groves located 800 m of altitude, in Cuenca province, also in Castilla-La Mancha.
The result is a pleasant and scented oil, quite balanced, with a long aftertaste. We’ve worked on containing the bitter and the itchy typical of the Cornicabra, without taking the personality out, which matches perfectly with the arbequina.
Mild sensations of tomato and ripe fruit come out, together with subtle green touches. Also happens the discovery of fragrances such as arugula, endive, green apple and green grass, prevailing ripe notes of apple and banana.
This EVOO is once more a demonstration of our commitment with the care of the environment, sustainability and a constant improvement.

Our organic EVOO gives character to arcula salads, tomatoes and nuts. In the cooking, it enhances rice with chicken and fried squids. It combines perfectly with spoon dishes such as fabada and roasted beans with cabbage. ¿What about cooking it with sweet and salt accents in a roasted turkey stuffed with raisins and chestnuts?
