Este queso madura durante mínimo 60 días, guiado por los volteos y lavados de corteza realizados a diario a mano por nuestra Maestra quesera.

En su corteza predominan los tonos anaranjados de los que es responsable la bacteria Brevibacterium linnens.

De textura mantecosa y untuosa, puede tener algunos ojos o carecer de ellos. Olor a humedad limpia, afrutado, a cuero y vegetal seco. En boca resulta persistente, con una ligera acidez, toque a cereal y fruto seco y final dulce.


 

Ideal para acompañar tablas de quesos con frutos secos, especialmente dátil, o con verduras a la brasa y regado de un virgen extra de variedad arbequin

Raw sheep milk, lactic ferments, curd, vegetable coagulant and salt.
CONSUMPTION RECOMMENDATIONS
Consume it tempered.
CONSERVATION RECOMMENDATIONS
Maintain refrigeration temperatures between 6-8°C. Once opened, keep it wrapped to avoid drying out.
