Nuestra Maestra quesera dirige el afinado durante mínimo 60 días a través de sucesivos volteos manuales y cepillados de corteza en función de la evolución de las piezas

La corteza cobra tonos verde-azulados debidos a un gran crecimiento de colonias de Penicillium roqueforti.

De textura untuosa, lo caracterizan los aromas limpios a setas, cueva.

Destacan pequeñas notas especiadas en boca y su alta solubilidad.

 

Pruébalo con un crujiente de pistacho horneado y acompañado de un virgen extra de variedad arbequina o manzanilla.
