What are PDO Cheeses?
Protected Designation of Origin (PDO) cheeses are produced under strict regulations that guarantee their geographic origin, raw materials, production methods, and overall quality. In the case of Manchego PDO, these standards require the cheese to be crafted exclusively from the milk of Manchega sheep, raised and milked within the La Mancha region.
At Quesos De Hualdo, we do more than simply meet these requirements; we go further. By using raw milk—never pasteurized—we preserve its full microbiological richness. We age our cheeses on traditional wooden boards and maintain absolute control over every stage, from the pastures to the ripening chambers.
