During this process, the wheels evolve naturally, gaining structure, complexity, and a unique aromatic richness. The texture becomes firmer, the flavors more concentrated, and roasted, lactic, or fruity nuances emerge depending on the rind and the duration of the aging process.

What Are Cured Cheeses? Types and Characteristics
The Quesos De Hualdo range of cured cheeses offers different intensities, textures, and aromatic profiles. Each is crafted for palates seeking authenticity, depth, and versatility at the table.Â
Mi Cheeses
- Mi 4 Months: Young, fresh, and balanced Manchego. Ideal for mild palates.
- Mi 7 Months: Medium aging with a buttery texture and notes of cereal and dry grass.
Sigma Cheeses
- Sigma 4 Months: Flexible and aromatic, with notes of bread and mild nuts.
- Sigma 10 Months: Intense, with toasted notes and a firm, grainy texture.
- Sigma 16–20 Months (Wheel): Long-aged, complex cheeses with notes of caramel, damp earth, and toasted nuts.
