Sigma 10 Months is a cured cheese with excellent structure. It features a firm, granular texture and a complex aromatic richness that develops throughout its maturation.
This cheese offers a sophisticated profile with notes of toasted nuts, butter, and rye bread, all resting on a subtly sweet background.
Sigma 10 Months is crafted from raw Manchega sheep’s milk from our own estate. Following artisanal production, the wheels age for 10 months in our aging chambers, where they develop their signature toasted notes and slight, elegant hints of oxidation.
Nuts, fruit compotes, and aged wines are the perfect companions for this cheese, balancing its firm structure while highlighting its toasted and sweet nuances.
Aging Time
