We cultivate forages, olive groves, and horticultural products using low-impact practices—often avoiding tilling—to promote a closed-loop cycle between agriculture, livestock, and energy.

How do you protect biodiversity?

Finca Hualdo is a true natural sanctuary: more than 150 bird species, native carnivores, and protected species such as the Imperial Eagle and the Iberian Lynx call it home. We actively preserve Mediterranean forests and riparian zones, maintain pollinator margins, and collaborate with universities to monitor local wildlife. Our agricultural model is designed to coexist harmoniously with nature.

Do you produce your own energy?

Yes. Our three photovoltaic solar plants generate over 30% of the energy required for farm operations, significantly reducing our carbon footprint and bringing us closer to full energy self-sufficiency.

What does it mean to have a regenerative agriculture model?

Regenerative agriculture goes beyond "doing no harm"; it actively improves the health of the ecosystem. Located in El Carpio de Tajo, we sit on the banks of a river with immense ecological and historical value. Our practices are dedicated to its protection: we conserve riparian vegetation, prevent water contamination, and contribute to the area's ecological balance through controlled, regenerative techniques.

What is a gourmet artisan cheese?

A gourmet artisan cheese is the result of small-scale production, where manual craftsmanship, high-quality milk, and natural cultures take center stage. At Quesos de Hualdo, we craft each wheel in our own cheese facility, overseeing every step from the nutrition of our sheep to the final aging—resulting in cheeses with identity, balance, and unique sensory expression.

What milk do you use to make your cheeses?

All our cheeses are made with raw Manchega sheep's milk, sourced daily from our own flock. We control the entire process from origin to guarantee freshness, quality, and traceability.

How do the sheep on the farm live?

Our sheep graze daily across the farm's diverse landscapes—a practice that ensures a varied diet while supporting natural soil regeneration. They rest in well-equipped facilities overnight and receive continuous care, with a diet based on forages and cereals grown on the estate.

What is a Manchego cheese?

Manchego is a cheese protected by PDO (Protected Designation of Origin), made with Manchega sheep's milk following strict standards for production, aging, and geographical origin. At Quesos de Hualdo, we draw on this same prestigious milk and traditional expertise as our foundation—while also embracing the freedom to explore new sensory profiles and maturation techniques.

I am allergic to cow's milk. Can I eat De Hualdo cheeses?

Yes. Our cheeses are made exclusively from sheep's milk, which contains different proteins than cow's milk and is often better tolerated. However, if you have a severe milk protein allergy, we recommend consulting a healthcare professional before consumption.

Can I eat the rind?

Yes. All the rinds of our cheeses are 100% natural and edible, since we do not use waxes, paraffins, or chemical treatments. That said, it comes down to personal preference: some people enjoy the intensity and texture, while others prefer to remove it.

What is the best way to serve De Hualdo cheeses?

Remove them from the refrigerator at least 30 minutes before serving to let them reach room temperature, allowing their full aroma and flavor to develop. Use a suitable knife to cut generous portions and arrange them in order of increasing intensity. Pair with neutral bread, fresh fruit, or nuts, avoiding strong flavors that might overshadow their character. 

What type of rennet do you use?

Are your cheeses suitable for people with celiac disease?

Yes. All our cheeses are gluten-free and produced without risk of cross-contamination.

Do your cheeses contain allergens?

The only allergen present is sheep's milk. Our cheeses contain no nuts, soy, or additives, and all production takes place in controlled facilities.

Do they contain additives or preservatives?

No. Our cheeses are 100% natural. We only use raw milk, rennet, cultures, and salt. Nothing else.

Can I freeze the cheeses?

We don't recommend it. Freezing affects texture and can alter flavor. It's best to keep them refrigerated and consume within the recommended time.

How should I store cheese once opened?

Wrap in parchment paper or a clean cotton cloth and place in an airtight container in the least cold part of your refrigerator. Avoid plastic wrap.

Are your cheeses pasteurized or made from raw milk?

We craft all our cheeses from raw Manchega sheep's milk. This traditional method preserves the milk's inherent character and natural richness, resulting in greater aromatic complexity and a more authentic flavor.

What varieties of EVOO do you offer?

We produce single-varietal oils from Arbequina, Picual, Cornicabra, and Manzanilla olives, as well as blends like our Reserva Familia (Family Reserve). Each variety expresses a unique sensory profile shaped by the olive grove, the harvest, and the production method.

What is the best way to preserve the oil?

In a cool, dry place away from light and heat. Light, oxygen, and high temperatures accelerate oxidation. A closed pantry is ideal.

Can I store the oil in the refrigerator?

You can, but cold temperatures may cause the oil to solidify and appear cloudy—which isn't harmful, just inconvenient. If this happens, let it rest at room temperature until it returns to its normal state.

How long does the oil last once opened?

While olive oil doesn't expire in the traditional sense, we recommend consuming it within six to nine months of opening to fully enjoy its delicate aromas and health benefits. For the best experience, always choose oil from the current harvest.

Does the oil contain allergens?

No. It's 100% natural olive juice—free of gluten, lactose, and common allergens.

Which packaging best preserves the oil?

Tins and dark glass offer the best protection from light. Once opened, keep the container tightly sealed and away from heat.

Is your oil suitable for frying, or only for raw use?

Our oils are ideal raw, but they're also stable at high temperatures—making them excellent for cooking and frying.

Do you offer organic oils?

Yes. We produce a certified organic oil, available in several formats. It's a balanced blend cultivated and produced under strict organic farming standards, with the same commitment to quality as our entire range.

Why does the taste or color vary between harvests?

Extra virgin olive oil is a living product, and each harvest is unique. Climate, soil, and the precise moment of harvest all influence taste, color, and aroma. This variation is natural—and part of what makes it authentic.

Fruitiness measures the intensity of an oil's natural aromas—green olive, leaf, almond, and more. At Casas de Hualdo, we produce oils with medium to high fruitiness, reflecting our early harvest and commitment to character, freshness, and sensory expression.

Are the garden products organic?

Yes. All products from Huerta de Hualdo are certified organic, grown without pesticides or chemical fertilizers, following regenerative agriculture practices that respect the soil and the environment.

Where do the fresh products come from?

Directly from our garden and greenhouse on the Finca Hualdo estate, where we oversee the entire process—from receiving organic seedlings to harvesting and shipping.

What is the shelf life of garden products?

It depends on the product. Tender leaves should be consumed within two to three days; vegetables such as zucchini, eggplant, or tomatoes keep well for five to seven days if stored properly.

Should they be washed before eating?

Yes. Although we don't apply chemical treatments, we recommend washing all fruits and vegetables with clean water before consuming them.

Are post-harvest treatments applied?

No. We don't apply waxes, gases, or artificial preservatives after harvesting. Our products are 100% fresh and natural.

Can I customize my box?

Yes. You can note your preferences or restrictions with each order, and we'll adapt the contents of your box whenever possible.

Do you offer weekly subscriptions?
