At Finca Hualdo, we practice regenerative and integrated agriculture, combining ancestral techniques with advanced technology to regenerate the soil, protect biodiversity, and optimize resources. We cultivate forages, olive groves, and horticultural products using low-impact practices—often avoiding tilling—to promote a closed-loop cycle between agriculture, livestock, and energy.
Finca Hualdo is a true natural sanctuary: more than 150 bird species, native carnivores, and protected species such as the Imperial Eagle and the Iberian Lynx call it home. We actively preserve Mediterranean forests and riparian zones, maintain pollinator margins, and collaborate with universities to monitor local wildlife. Our agricultural model is designed to coexist harmoniously with nature.

Birdwatchers can spot nearly 200 species, including the emblematic Eagle Owl. We manage the ecosystem to ensure livestock and wildlife thrive in balance.
Located in El Carpio de Tajo, we sit on the banks of a river with immense ecological and historical value. Our practices are dedicated to its protection: we conserve riparian vegetation, prevent water contamination, and contribute to the area's ecological balance through controlled, regenerative techniques.
QUESOS DE HUALDO
A gourmet artisan cheese is the result of small-scale production, where manual craftsmanship, high-quality milk, and natural cultures take center stage. At Quesos de Hualdo, we craft each wheel in our own cheese facility, overseeing every step from the nutrition of our sheep to the final aging—resulting in cheeses with identity, balance, and unique sensory expression.
All our cheeses are made with raw Manchega sheep's milk, sourced daily from our own flock. We control the entire process from origin to guarantee freshness, quality, and traceability.
Our sheep graze daily across the farm's diverse landscapes—a practice that ensures a varied diet while supporting natural soil regeneration. They rest in well-equipped facilities overnight and receive continuous care, with a diet based on forages and cereals grown on the estate.
Manchego is a cheese protected by PDO (Protected Designation of Origin), made with Manchega sheep's milk following strict standards for production, aging, and geographical origin. At Quesos de Hualdo, we draw on this same prestigious milk and traditional expertise as our foundation—while also embracing the freedom to explore new sensory profiles and maturation techniques.
Yes. Our cheeses are made exclusively from sheep's milk, which contains different proteins than cow's milk and is often better tolerated. However, if you have a severe milk protein allergy, we recommend consulting a healthcare professional before consumption.
Yes. All the rinds of our cheeses are 100% natural and edible, since we do not use waxes, paraffins, or chemical treatments. That said, it comes down to personal preference: some people enjoy the intensity and texture, while others prefer to remove it.
Remove them from the refrigerator at least 30 minutes before serving to let them reach room temperature, allowing their full aroma and flavor to develop. Use a suitable knife to cut generous portions and arrange them in order of increasing intensity. Pair with neutral bread, fresh fruit, or nuts, avoiding strong flavors that might overshadow their character.

We don't recommend it. Freezing affects texture and can alter flavor. It's best to keep them refrigerated and consume within the recommended time.

CASAS DE HUALDO OILS
We produce single-varietal oils from Arbequina, Picual, Cornicabra, and Manzanilla olives, as well as blends like our Reserva Familia (Family Reserve). Each variety expresses a unique sensory profile shaped by the olive grove, the harvest, and the production method.
In a cool, dry place away from light and heat. Light, oxygen, and high temperatures accelerate oxidation. A closed pantry is ideal.
You can, but cold temperatures may cause the oil to solidify and appear cloudy—which isn't harmful, just inconvenient. If this happens, let it rest at room temperature until it returns to its normal state.
While olive oil doesn't expire in the traditional sense, we recommend consuming it within six to nine months of opening to fully enjoy its delicate aromas and health benefits. For the best experience, always choose oil from the current harvest.

Yes. All products from Huerta de Hualdo are certified organic, grown without pesticides or chemical fertilizers, following regenerative agriculture practices that respect the soil and the environment.
Directly from our garden and greenhouse on the Finca Hualdo estate, where we oversee the entire process—from receiving organic seedlings to harvesting and shipping.
It depends on the product. Tender leaves should be consumed within two to three days; vegetables such as zucchini, eggplant, or tomatoes keep well for five to seven days if stored properly.
Yes. Although we don't apply chemical treatments, we recommend washing all fruits and vegetables with clean water before consuming them.
