Strawberries stewed with red vermouth, Pi cheese, extra virgin olive oil, and cocoa with yuzu

With this dessert, we take a bolder approach, exploring surprising pairings and unconventional seasonings with great intensity and a long-lasting finish. Not only is the dish visually striking, thanks to its vibrant colours (red, pink, green, white and chocolate brown), but it is also absolutely exquisite.

The addition of Pi cheese brings delicate floral notes to the dish, along with its creamy, smooth texture. On the nose, its hint of damp earth and subtle fungal character is truly intriguing.

The red vermouth, slightly sweet, pairs perfectly with the strawberries. It adds an elegant, distinctive aroma with plenty of character. Vermouth comes in two main styles: red, which is sweet, and white, which is dry.

It is a fortified wine macerated with a variety of herbal extracts, flowers, roots, spices and fruits, which are blended with alcohol in a vessel known as a tamburo, where they infuse for several weeks. The wine and sugar are then added, and the mixture is left to rest. That’s what gives it its delicious flavour!

Ingredients

  • 1 kg strawberries
  • 1 small glass of red vermouth¡
  • Zest of 2 limes
  • 1/2 small glass of agave syrup
  • Pi mould-ripened rind cheese
  • Reserva de Familia extra virgin olive oil from Casas de Hualdo
  • Yuzu cocoa
  • Mint

Method

We clean the strawberries, removing the green tops, which we set aside for later to decorate the dish.

We cut each one into halves or quarters, depending on their size.

In a pan, we cook the strawberries together with the vermouth, the syrup and the lime zest until the vermouth reduces. As they cook, the strawberries release their juices, concentrating their flavour and creating a rich, syrupy sauce with deep aroma.

We plate.

We slice the Pi cheese and add it to the dish.

We break the chocolate into pieces and scatter them over the top.

We finish by decorating with a few mint leaves and a drizzle of Reserva de Familia extra virgin olive oil from Casas de Hualdo.
