Lambda cheese has a smooth texture that melts in your mouth. While the interior remains luxuriously creamy, its exterior—transformed by the meticulous washing process—provides a refined intensity that is expressive without being overpowering.
This washed-rind cheese delivers a truly unique aromatic profile. It reveals notes of clean wool and an elegant, natural sweetness, culminating in an enveloping, long finish that lingers beautifully.
Lambda cheese is crafted with raw Manchega sheep’s milk, and its the rind is regularly washed to encourage the growth of Brevibacterium linens. This specific process is responsible for the cheese’s signature savory complexity and its deeply aromatic character.
To fully appreciate the depth of Lambda Mini, we recommend serving it with new potatoes, traditional German rye bread, or wines from the Jerez region. Its bold personality also stands up wonderfully to the structured acidity of these pairings.
